Winter has finally arrived in Texas, which means a hot breakfast is a must to start the day. We are spicing up the traditional morning oatmeal by replacing oats with buckwheat groats to give your morning porridge a bump in nutrition, as well as a more nutty and hearty flavor. And just like the Thunderbird bar, this healthy recipe is loaded with antioxidants, anti-inflammatory properties, and omega-3s. 

Cherry-Walnut-Cinnamon Thunderbird Bar Groats
Ingredients:
  • 1 cup buckwheat groats (soaked overnight and rinsed clean)
  • 1-2 tsps cinnamon
  • 2 ½ cups of milk of choice (dairy, almond, cashew, coconut)
  • Pinch of Himalayan sea salt
  • ½ cup chopped dates
  • ½ cup toasted walnuts
  • ½ cup dried cherries
*Bonus if you add a chopped up Thunderbird bar!
Directions:
Heat the groats in a medium-sized sauce pot over medium-high heat for 2-3 minutes. Make sure to keep stirring them to keep them from sticking to the pot. Add in your cinnamon, salt, and liquid, and bring to a simmer. Cover the pot and cook until most of the liquid has drained. Remove from heat, stir in your toppings, and enjoy!
