What does Thunderbird have in common with our Ambassador, Dani Whitehead? Lots of things. For starters, we both strive to inspire you to get out and do “that thing” that you have always wanted to do. “That thing,” you’ve always told yourself you couldn’t do, are too old to do, not experienced enough to do, not fit enough to do. Second, we strive for simplicity. When it comes to our bars, we’ve stripped away all of the gimmicks, the added sugar, and the refined ingredients to provide our community with pure, clean, sustainable energy in a convenient, on-the-go fashion. Carrot Cake Donuts? Yes, please.

 

Autumn is (slowly) approaching and the time for warm, baked goods laden with spices is upon us, to be enjoyed in the crisper, cooler mornings with a piping mug of black coffee or as a guilt-free afternoon snack to push through the 3 p.m. slump. As a farewell to Thunderbird’s September Bar of the Month, I’ve whipped a Paleo, gluten, dairy, AND refined sugar-free recipe that satisfies all of the above criteria featuring everybody’s favorite comfort food: donuts. Made using our Cashew Fig Carrot Bar’s key ingredients and some sifted almond and coconut flour, these baked donuts lend all of the flavor and satisfaction of a carrot cake, minus the allergens and empty calories that have kept many of us at bay from this timeless favorite.

Paleo Carrot Cake Baked Donuts with Cashew Cream Cheese Frosting

For the donuts: (Makes 8)

  • ¾ c almond flour
  • 2 Tbsp. coconut flour
  • ½ tsp. baking powder
  • ¼ tsp.  Himalayan sea salt
  • ½ tsp. cinnamon
  • ¼ tsp. ginger
  • ¼ tsp. nutmeg
  • Pinch of clove powder
  • ¼ c shredded coconut (unsweetened)
  • ½ c shredded carrot
  • ½ c chopped dried figs
  • 2 eggs
  • 6 Tbsp. coconut oil
  • 6 Tbsp. honey or maple syrup

Preheat your oven to 350 degrees Fahrenheit. Sift all dry ingredients together in one bowl, and combine all wet ingredients in another. Add the wet ingredients to the dry, mix thoroughly, and then fold in the shredded carrots and figs. Pour batter into donut mold (fill each mold ¾ full), you may have to do 2 rounds if your donut pan only accommodates 6 donuts. Bake for 18-20 minutes or until donuts are golden and a toothpick comes out clean. Remove from oven and allow to COMPLETELY cool before proceeding to frost them.

For the frosting:

  • ½ c raw cashews, soaked overnight and drained
  • ¼ c maple syrup or honey
  • 4 Tbsp. coconut butter
  • 2 Tbsp. water to thin, if necessary

Process all ingredients in a food processor or high-powered blender. Once donuts are cool, dip each one into frosting and return to cooling rack to let frosting set. Top each donut with crushed walnuts and shredded coconut, if desired.

If you don’t have a donut pan or have some (inhumane) aversion to donuts, this recipe also works well as a carrot cake loaf.

National Month of Yoga Spotlight: Brand Ambassador Gustavo Padron

As many of you know, September is National Yoga Month, established in order to celebrate the worldwide Yogi community, as well as to educate about the health benefits of yoga and inspire a healthy lifestyle. Here at Thunderbird, we adamantly believe that regular yoga practice is key to a balanced and healthy mind, body, and spirit. In order to honor this month-long celebratory event, we've decided to spotlight our Brand Ambassador Gustavo Padron, one of Austin's most active and inspiring yoga teachers, who shared with us why yoga is such an important aspect of his life. 



Thunderbird: What inspires you?

GP: My students. Their effort and willingness to practice yoga and discover something new about their body, their mind and their connection to source (spirit/universe/heart). Tiny Humans also inspire me with their free spirit and their play time- they remind me to have fun and don't take myself too seriously. 

Thunderbird: Describe your "AHA!" moment with yoga.

GP: My "AHA" moment came to me while in child's pose when I first started practicing yoga. The nurturing quality of this pose helped me realize that in order to heal, I must surrender and trust the process.

Thunderbird: What is your favorite yoga pose, and why?

GP: Handstand, it quickens my blood, forces me to connect to my breath, and empowers me to see things from a different angle/perspective.

Thunderbird: To you, what is the greatest reward of teaching yoga?

GP: My greatest reward in teaching yoga is seeing my students grow. I am fascinated by how many of my students have changed their lives through the power of this beautiful practice.

Thunderbird: What do you feel is your greatest accomplishment of 2015?

GP: My greatest accomplishment to date has been leading an international retreat to Costa Rica and being featured in Austin Fit Magazine.

Thunderbird: If you had to walk around with a sign taped to your forehead for the rest of this month, what would it say?

GP: #findyohappy

Fast and healthy recipes for active individuals: what athlete can resist that?

Laurel and Rebeccah have spent the early part of 2015 at a team training camp in Florida, preparing for the upcoming triathlon season. They put in some HUGE weeks of training, and are now back in New York, resting up before they hit the road again for some early season races. We thought it would be the perfect time to introduce the new Thunderbird athletes!

Lets find out more about their training, racing, motherhood, and of course the inspiration behind their oh so delicious food blog, athlete food.


Interview:

  • How was the camp? It looks like y’all didn’t get the typical Florida sun, but it didn't seem to have slowed y’all down.
  • L- Training camp was immensely challenging but also very rewarding. It was a solid two weeks of hard swimming, biking and running.  The cold, wind and rain made some of the sessions even tougher but being surrounded by a positive, motivated and supportive group of people helped us get through it.


  • Have y’all always enjoyed cooking? What inspired you to create athlete food?
  • B - I've always enjoyed cooking and did a lot of cooking for the family when we were growing up. I also spent many years working as an accountant for one of New York's top bakery's (Amy's Bread) where I learned a lot about making good food - my desk was practically in the kitchen. Laurel and I were inspired to start Athlete Food after we started fielding questions about what we eat to fuel our triathlon endeavors. We teamed up with our good friend and food writer, Melissa Lasher, and started developing recipes that we could share with our friends, family and anyone interested in healthy eating.


  • You’ve just finished a workout, it’s 7:30 p.m. and you need to get dinner on the table. What’s your go to quick and healthy meal?
  • L: my go to fast meal is the Athlete Food lettuce wraps with tofu, with a side of sweet potato fries. I can usually get this made in 30 mins and it feels like a real meal. Recipe


  • Rebeccah, any tips for new mothers trying to balance motherhood, work, and training? Has it been a difficult adjustment to go back to training and racing full time?
  • B - my best piece of advice is to do your own thing. Do what feels natural and don't force anything when it comes to getting back to training and racing. I didn't run at all for over three months after having Amy because it just didn't feel right. Running fast took even longer. There were some difficult times and I'm still not back to where I want to be, but the whole process has been extremely rewarding.


  • Has (baby) Amy tried a Thunderbird bar, yet?
  • B- yes. I've had to hide them in the back of the pantry because if she sees the box, she won't let me be until I give her one…or three.


  • What are three things you always pack in your gym bag?
  • Sunscreen 50spf, headphones, and Bobbi Brown lipgloss and moisture balm.


  • Do y’all follow a particular diet? How does Thunderbird fit into your views on nutrition?
  • B - I'm gluten-free because it helps control my allergies. I wasn't able to eat bars for so long because I couldn't find one that was GF that I liked until I found thunderbird. I also try to eat as many whole, unprocessed and super foods as possible. The ingredients in the thunderbird and gather bars are what I would sit down and eat, but in a portable package.


  • How far into your pregnancy did you work out, and how soon after birth did you resume training?
  • B - I exercised (which should be defined very loosely!) until about 7 months. I ran until about halfway and did as much walking as I could. After having Amy, I started exercising again at about 3 months. I started racing again when she was 4 months. I raced for pure enjoyment and for the challenge of it (not for money or podiums), on very little training. I started training again full-time when Amy turned 1.


  • Do you think your healthy lifestyle contributed to your beating cancer?
  • L- Yes, being an athlete with a healthy body and mindset helped me tremendously. My doctors told me that right away. I was able to fight the disease much better than an unhealthy person.


  • Best tip to get out the door on those days you are really struggling to find the motivation?
  • If you are struggling to find motivation , smile!  Think of a way to make the workout fun, put on some good tunes and remind yourself that you will feel great afterwards!

    Meet Thunderbird Sponsored Athelete Colin O'Brady

    It's no secret that our company was founded by endurance athletes. Thunderbird was initially created as fuel made by athletes for athletes. As we grow and expand, we're looking for unique individuals to partner with, to provide fuel for their epic adventures. This past month, I found one unique individual who embodies the Thunderbird ethos. Tribe, meet Colin O'Brady.

    Upon meeting Colin, I realized that he met the first requirement of Thunderbird stardom: One must have quads of Thunder. Those quads brought him to victory in his first ever triathlon, which he completed only 18 months after he was severely burned in a fire in Thailand. Colin's win after this life-changing event shows a perserverance that is unmatched by other athletes.

    While I was able to sit down with Colin and his amazing lady love, Jenna, I also had him answer some interview questions that would show a greater insight into Colin's life and values. His food philosophy is directly in line with the Thunderbird values of producing sustainable, whole foods, that nourish the body and mind. We couldn't be happier to have him as a sponsored athlete and hope he meets his current goal of reaching the 2016 Olympics!

    Why do you want to represent Thunderbird?

    Not only do I love the Thunderbird product, but the ethos of the company are right inline with my own values. The mission of delivering tasty, healthy and raw foods to consumers, while leveling a minimal impact on the environment is a mission I can proudly embrace. 

     

    What Athletic activities do you participate in? How did this passion develop?

    I have always been involved with sports. As a kid I was a national ranked and 10 time Oregon Champion in Swimming, as well as a Oregon State Champion in Soccer. I went on to swim at Yale University. I thought after college my athletic career was over, but there was still a little boy inside of my dreaming of the Olympics. 

    In 2008 I was severely burned in a fire i- Thailand. It landed me in several Thai hospitals where I was unable to walk for months. Having life flipped upside down, not knowing if I would ever fully recover I my triathlon dream was born. I vowed to mom Mom I would complete a triathlon after I got out of the hospital. Not only did I complete a triathlon, but surprising myself I won the Chicago Triathlon just 18 months after my accident. reigniting my Olympic passion, I turned professional, have spent the last 4 years chasing the Olympic dream in triathlon. 

     

    Please explain your personal food manifesto:

    My family has been in the natural food industry long before Whole Foods was a household name, and the natural foods industry was a fringe movement of hippie collective and co-ops. I was raised with that as the backdrop to my childhood, my mother and stepdad founding a New Seasons Market, a regional natural foods chain based out of Portland, OR, and my father being an organic farmer on the North Shore of Kauai. My food manifesto naturally grew (pun-intended) from there. I believe in the importance of eating organic, sustainable and local. Eating simple unprocessed foods, leads to a healthy life and a healthy earth. 

     

    What short term and long term goals in terms of nutrition and fitness?

    My biggest goal is to qualify to represent the USA at the 2016 Olympics. Not only do I want to represent my country in the greatest sporting event in the world, but I want to have a forum to show people to never give up. I faced a tremendous setback when I was burned, and I got back on feet and may stronger then ever before. It was have been very easy to give up. I think goal setting whether big or small is an important process for anyone

     

    Who or what inspires you everyday?

    Jenna Besaw my beautiful girlfriend inspires me everyday. She has sacrificed a lot to my number one support on this journey. We approach each day and each race together. Without her I would be lost. 

     

    How does Thunderbird font into my lifestyle?

    Although energy gels and powders do have their role in endurance sports, I love to eat as much real food as possible. Thunderbird bars provide just that in a easy and ready to eat form. It is perfect for a quick snack after a workout, or in the middle of a long ride.
